Turkey Meatballs with Green Beans and Tomatoes

Who’s craving meatballs?!?!? Try these for a delicious and healthy alternative. Use your favorite low glycemic spices to make it your own!!

2 servings

Ingredients

• 14 oz. 95-97% lean ground turkey
• ½ tsp salt
• ¼ cup minced scallion
• 2 tsp blackening seasoning
• 2 tsp olive oil
• 2 cups cut green beans
• ¾ cup cherry tomatoes, cut in half
• 1 cup fresh basil leaves, gently torn
• ¾ cup water

Directions

1. Optional: To make your own blackening seasoning, combine 3 tablespoons paprika, 2 teaspoons onion powder, 2 teaspoons garlic powder, 2 tablespoons ground black pepper, 1 teaspoon dried thyme, and 1 teaspoon cayenne pepper in a small bowl. Measure out 1 teaspoon blackening seasoning per serving (2 teaspoons for 2 servings) and store the extra in a closed, airtight container to use for other meals.

2. To make the meatballs, thoroughly combine the ground turkey with the salt and scallions and shape into equal-sized meatballs (about 6 meatballs for 2 serving)

3. Sprinkle the meatballs with 1 1/2 teaspoons of blackening seasoning.

4. Heat the olive oil in an 8-inch sauce pan over moderate heat.

5. Place the meatballs into the pan and brown gently from all sides.

6. Once the meatballs are well-browned, remove them from the pan and set aside.

7. Add the green beans and 3/4 cups of water into the same sauce pan, and bring to a boil.

8. Return the browned meatballs into the pan, cover with a lid, and cook gently for 8 minutes, until the beans are tender and the meatballs have reached an internal temperature of 16 Deg F.

9. Add the cherry tomatoes and basil leaves and continue to simmer for one more minute.

10. Serve 3 meatballs per portion with an equal amount of the veggies and their juices per portion.
