Ingredients:
• 3 tbsp balsamic vinegar
• 2, (7-oz.) cans of tuna, packed in water and drained
• 4 tsp extra virgin olive oil
• 2 garlic cloves, minced
• 1 cup grape tomatoes, halved
• 6 hard-boiled eggs, sliced
• 6 cups mixed greens
• 2 cups string beans, steamed until just tender
Directions:
1. Whisk together oil, vinegar, and garlic.
2. Prepare a bed of mixed greens. Layer with string beans, tomatoes, egg slices, and tuna. Drizzle with oil mixture.
Tip: Purchase hard-boiled, peeled eggs at the grocery store to save time.
