Seasonal Green Salad

Make 1 serving

Ingredients

• Salad
• ½ cup spinach or romaine
• ¼ tsp ground black pepper
• ⅔ cup low-fat cottage cheese
• ½ cup curly endive (frisee) or Tuscan kale
• 1 hardboiled egg
• ¼ cup finely shredded red cabbage
• Simple Mustard Vinaigrette
• ¼ tsp cider vinegar
• ½ tbsp olive oil
• Pinch of salt & pepper
• ⅛ tsp whole grain or Dijon mustard

Directions

1. To make the vinaigrette, whisk together the olive oil, vinegar, mustard, salt & pepper in a medium-sized bowl.

2. Add the curly endive, spinach, and red cabbage to the bowl and toss to combine.

3. Top salad with cottage cheese and hardboiled egg, then season with pepper.


Tip: You may use ¾ tablespoons of a low-carb honey mustard salad dressing, like Wishbone Sweet & Spicy Honey Mustard Dressing, in place of the mustard vinaigrette.
