Ingredients
4 oz, boneless [113.4 g] Prosciutto
2 medium [196 g] Peach (sliced )
1 cup [20 g] Arugula (Rocket)
2 tbsp [14 g] Pumpkin Seeds
0.5 tablespoon [6.75 g] Olive Oil
0.5 medium Lemon (juice)
1.5 tsp [8.25 g] Dijon Mustard
1 Dash [1 g] Himalayan Pink Salt
1 dash [0.1 g] Black Pepper
Directions
Using a grill or grill pan, cook peach slices on medium heat, about 5 minutes on each side.
Mix together lemon juice, olive oil, dijon mustard, salt and pepper until it forms a creamy dressing.
Add arugula, prosciutto, pumpkin seeds, warm peaches, and dressing to a plate.
Serve warm and enjoy.
