Ingredients
- 12 oz (336 g) ground turkey
- 1/4 cup (37.5 g) crumbled feta cheese
- 1/2 cup (30 g) chopped parsley
- 1 tsp (2.8 g) garlic powder
- 1/2 tsp (1.2 g) onion powder
- 1/4 tsp (1.5 g) salt
- 6 oz (168 g) chickpea pasta
- 8 cherry tomatoes (136 g), halved
- 2 tbsp (10 g) chopped red onions
- 1/2 tbsp (7 g) olive oil
- Juice of 1/2 small lemon (15 g)
Directions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine the ground turkey, crumbled feta cheese, chopped parsley, garlic powder, onion powder, and salt. Mix thoroughly using your hands.
- Shape the turkey mixture into golf ball-sized balls and place them on a baking sheet. Bake in the preheated oven for about 20 minutes, until cooked through.
- While the turkey balls are baking, cook the chickpea pasta according to the package instructions. Once cooked, toss the pasta with halved cherry tomatoes, chopped red onions, olive oil, and lemon juice.
- Serve the pasta salad with the cooked turkey balls, either warm or cooled.
