Crustless Kale Quiche

Crustless Kale Quiche??

4 servings


2 cups kale
1 cup tomatoes
4 eggs
2 cups 2% cottage cheese
1 1/3 cup feta cheese
2 tbsp. onion
2 tbsp. almond flour
¼ tsp salt


Chop and sauté onion until golden; chop and add tomato to onion, cooking just to cook out most of the liquid.

Mix together in bowl the eggs, cottage cheese, feta, flour and salt.

Add kale and onion tomato mix to egg cheese mixture.

Butter 9” pie pan; Add mixture to pan and bake for one hour at 350.
