Ingredients:
• ¾ lb. 95-97% lean ground beef• 1½ tsp olive oil
• 1 clove garlic, minced
• 1½ tsp Dijon mustard
• 3 cups cauliflower rice
• ¼ cup water
• ½ tsp salt
• ½ tsp ground black pepper
• ½ cup reduced-fat grated cheddar cheese
• 2 tbsp fresh chopped parsley (optional)
Directions:
1. Heat olive oil in an 8-inch skillet over medium-high heat.
2. When the skillet is hot, add the beef, salt, and pepper. Break the meat into crumbles as it cooks.
3. Add the garlic and continue cooking until aromatic, about 1 minute, and then add the mustard and cauliflower; stir to combine.
4. Pour in the water and continue cooking until cauliflower is tender, about 3 to 5 minutes.
5. Remove the skillet from the heat, sprinkle the cheese evenly over the top and lightly fold to distribute the cheese. Sprinkle parsley on top if desired.
6. Divide into equal-sized portions and serve.
