Butter Chicken With Basmati Rice

Servings: 2, Prep Time: 10 min, Cook Time: 40 min

Ingredients

  • 1 lb (448 g) chicken breast
  • 1/2 onion
  • 3 tbsp (45 g) Greek yogurt
  • 2 cloves garlic
  • 1 tbsp (6 g) grated fresh ginger
  • 1/8 cup (16 g) carrots
  • 2 tbsp (32 g) tomato paste
  • 1/2 cup (113 g) light coconut milk
  • 1 tbsp (7 g) turmeric powder
  • 1/2 tbsp (3 g) cumin
  • 1 tbsp (6 g) curry powder
  • 1/4 cup (45 g) basmati rice
  • 1/2 cup (118 g) water

Directions

  1. Cut chicken into bite size pieces and set aside in a bowl.
  2. Marinate chicken in yogurt, grated ginger, minced garlic and spices for at least 30 minutes.
  3. In the meantime, cook rice and allow to steam fully.
  4. Chop onion and carrots, set aside.
  5. Heat a skillet to medium high and sauté chicken bites with 1 tbsp coconut oil for 5-7 minutes.
  6. Remove chicken and sauté onions and carrots for 3 minutes.
  7. Add tomato paste and coconut milk and add chicken back into the skillet. Cook for 10 minutes until chicken is fully cooked and serve over rice.

Lemon-Dill Baked Cod with Quinoa & Asparagus

SERVINGS: 2 PREP TIME: 10 MINUTES COOKING TIME: 15 MINUTES INGREDIENTS 10 oz [280 g] Cod (2 Fillets) 2 tbsp [28 g] Lemon Juice 1 sprigs [0.2 g] Dill (Chopped) 0.5 cup [85 g] Quinoa (uncooked) 1 bundle [100 g] Asparagus (Trimmed) 2 tbsp [28 g] Avocado Oil (Divided) 2 dash [1.25 ml] Kosher Salt (Divided) 1 dash [0.1 g] Black Pepper DIRECTIONS Cook the quinoa according to the package instructions. Preheat the oven to 400°F (204°C). Toss the asparagus with half of the avocado oil and half the kosher salt. Spread it in a single layer on a baking sheet.
