Ingredients
- 1 lb (448 g) chicken breast
- 1/2 onion
- 3 tbsp (45 g) Greek yogurt
- 2 cloves garlic
- 1 tbsp (6 g) grated fresh ginger
- 1/8 cup (16 g) carrots
- 2 tbsp (32 g) tomato paste
- 1/2 cup (113 g) light coconut milk
- 1 tbsp (7 g) turmeric powder
- 1/2 tbsp (3 g) cumin
- 1 tbsp (6 g) curry powder
- 1/4 cup (45 g) basmati rice
- 1/2 cup (118 g) water
Directions
- Cut chicken into bite size pieces and set aside in a bowl.
- Marinate chicken in yogurt, grated ginger, minced garlic and spices for at least 30 minutes.
- In the meantime, cook rice and allow to steam fully.
- Chop onion and carrots, set aside.
- Heat a skillet to medium high and sauté chicken bites with 1 tbsp coconut oil for 5-7 minutes.
- Remove chicken and sauté onions and carrots for 3 minutes.
- Add tomato paste and coconut milk and add chicken back into the skillet. Cook for 10 minutes until chicken is fully cooked and serve over rice.
