3 Ingredient Sugar Free Cookies


  • 1 cup nut butter of choice (I like Valencia Organic Peanut Butter)
  • 3/4 cup sugar free substitute (Monk Fruit Extract, Erythritol, or Stevia are good choices)
  • 1 large egg at room temperature


1. Preheat oven to 350F and line a baking sheet with parchment paper or silicone liner.
2. ⁠In a large bowl, combine all your ingredients and mix well until combined.
3. ⁠Using a cookie scoop or your hands, form small balls onto the cookie sheet, spread 3-4 inches apart. Press each ball into a cookie shape and press down with a fork making cross sections.
4. ⁠Bake for 8-10 minutes, or until cookies are “just” golden brown but still soft.
5. ⁠Remove from the oven and allow to cool completely.
