Ingredients
0.25 cup, chopped [17.5 g] Mushrooms
1 tsp [4.8 g] Olive Oil
2 slice [84 g] Sprouted Grain Bread
2 oz [56.7 g] Mozzarella Cheese (Part Skim Milk)
0.5 tbsp [7 g] Pesto Sauce
1 cup [20 g] Arugula (Rocket)
Directions
Preheat oven to 350 degrees F (176 degrees C).
Cut mushrooms into fourths, add to a non-stick baking sheet, and toss in olive oil. Roast in the oven for 15-20 minutes until golden brown.
Spread pesto on both slices of bread. Top with sliced mozzarella and roasted mushrooms.
Oven bake the sandwich for 5-10 minutes until the cheese is melted.
Serve over a bed of arugula (rocket).
