Chopped Salad Chicken Wrap

Ingredients

  • 1 wrap [57 g] Gluten-Free Wrap

  • 10 leaf, medium [20 g] Iceberg Lettuce (Chopped into small pieces )

  • 0.12 cup, shredded [13.56 g] Cheddar Cheese

  • 1 medium piece (yield after cooking, bone removed) [62 g] Rotisserie Chicken (Chopped into small pieces )

  • 0.12 onion (small) [17.76 g] Red Onions (Diced into small cubes)

  • 0.25 medium [50.25 g] Cucumber (Diced into small cubes)

  • 0.12 cup [13.56 g] Shredded Carrots

  • 3 tsp [10.8 g] Ranch Seasoning Mix

  • 0.5 cup [120 g] Plain Non Fat Greek Yogurt

Directions

  1. Mix the Greek yogurt and ranch seasoning in a bowl to make the dressing.

  2. Add the iceberg lettuce, rotisserie chicken, cheddar cheese, red onions, carrots, cucumbers, and ranch dressing to a large bowl and gently toss until combined. Refrigerate until ready to eat.

  3. Add the chopped chicken salad to a large gluten-free wrap. Fold the left and right sides of the wrap in over the filling. Bring the bottom of the wrap up and over the filling while keeping the sides tucked in. Tuck the bottom edge of the wrap around the filling and roll the wrap closed.

Lemon-Dill Baked Cod with Quinoa & Asparagus

SERVINGS: 2 PREP TIME: 10 MINUTES COOKING TIME: 15 MINUTES INGREDIENTS 10 oz [280 g] Cod (2 Fillets) 2 tbsp [28 g] Lemon Juice 1 sprigs [0.2 g] Dill (Chopped) 0.5 cup [85 g] Quinoa (uncooked) 1 bundle [100 g] Asparagus (Trimmed) 2 tbsp [28 g] Avocado Oil (Divided) 2 dash [1.25 ml] Kosher Salt (Divided) 1 dash [0.1 g] Black Pepper DIRECTIONS Cook the quinoa according to the package instructions. Preheat the oven to 400°F (204°C). Toss the asparagus with half of the avocado oil and half the kosher salt. Spread it in a single layer on a baking sheet.
