Baked Tilapia with Bell Pepper Salsa

Servings: 3, Prep Time: 10 min, Cook Time: 20 min

Ingredients

  • 12 oz (340.2 g) tilapia
  • 1/2 cup (120 g) black beans (canned)
  • 1 medium (114 g) red bell pepper
  • 1 medium (114 g) orange bell pepper
  • 1 medium (148 g) tomato
  • 2 tbsp, chopped (10 g) red onions
  • 1.5 tbsp (21 g) olive oil
  • 1 tbsp (15 g) apple cider vinegar
  • 3 medium (639 g) red potatoes

Directions

  1. Dice the potatoes. Season with half of the olive oil and salt/pepper. Place on a baking sheet and bake at 400°F (205°C) for about 20 minutes.
  2. While the potatoes are cooking, dice the bell peppers, onion, and tomato. Add to a medium-sized bowl with the drained black beans, apple cider vinegar, and the remaining half of the olive oil. Add a dash of salt and pepper and stir.
  3. Line the tilapia on a baking sheet or oven-safe dish. Season with salt and pepper. Bake in the oven for about 10 minutes or until cooked throughout.
  4. Plate the tilapia with the bell pepper salsa on top and the potatoes on the side.

Bring to a boil, then reduce heat and simmer for 20 minutes or until tender. Drain any excess water and stir in 1 scoop of collagen while warm until fully dissolved. While lentils cook, steam broccoli and prepare other ingredients. For the sauce, whisk together tahini, lemon juice, warm water, maple syrup, garlic powder, and salt in a small bowl until smooth. Assemble bowls starting with the collagen-infused lentils as the base. Top with steamed broccoli, sliced avocado, shredded carrots, and cabbage.
