Makes 5 servings.
Ingredients:
• 1/4 tsp salt
• 1 1/2 cups shredded low-fat cheese – for melting on top (I used part-skim Mozzarella)
• 4 slices of Jennie-O low sodium turkey bacon- cooked and crumbled (can leave slightly under-done, it will finish cooking in the air fryer)
• 1 egg beaten
• 1 tablespoon water
• 10 sprays of pan spray
• 4 boneless skinless chicken breasts –8 oz each
• 1.5 cups of almond flour
• 3/4 cup grated Parmesan cheese
• 1/4 tsp garlic powder
• 1/4 tsp pepper
Add any spices to heat it up like cayenne pepper to the almond flower cheese; Tabasco and Lea & Perrins to the eggs, etc.
Directions:
• Preheat the air fryer to 400 degrees
• Bowl 1- mix egg and water, Tabasco if like spice
• Bowl 2 – Almond Flower, Parmesan cheese, pepper, salt and garlic, and any spices you like other than sugar
• Bowl 3 – Grated Cheese and Bacon Crumbles
• Dip Chicken in Bowl; then
• Cook in an air fryer spraying each side with pan spray
• Place chicken on an air fryer rack and bake for about 18-20 minutes or 160 degrees
Remove from oven top, and bake it until Cheese melts.
