Bacon Parmesan Fried Chicken

Makes 5 servings.

Ingredients:

• 1/4 tsp salt
• 1 1/2 cups shredded low-fat cheese – for melting on top (I used part-skim Mozzarella)
• 4 slices of Jennie-O low sodium turkey bacon- cooked and crumbled (can leave slightly under-done, it will finish cooking in the air fryer)
• 1 egg beaten
• 1 tablespoon water
• 10 sprays of pan spray
• 4 boneless skinless chicken breasts –8 oz each
• 1.5 cups of almond flour
• 3/4 cup grated Parmesan cheese
• 1/4 tsp garlic powder
• 1/4 tsp pepper

Add any spices to heat it up like cayenne pepper to the almond flower cheese; Tabasco and Lea & Perrins to the eggs, etc.





Directions:

• Preheat the air fryer to 400 degrees 

• Bowl 1- mix egg and water, Tabasco if like spice 

• Bowl 2 – Almond Flower, Parmesan cheese, pepper, salt and garlic, and any spices you like other than sugar 

• Bowl 3 – Grated Cheese and Bacon Crumbles 

• Dip Chicken in Bowl; then

• Cook in an air fryer spraying each side with pan spray 

• Place chicken on an air fryer rack and bake for about 18-20 minutes or 160 degrees 

Remove from oven top, and bake it until Cheese melts.

Sauté the turkey, zucchini, spinach, white beans, and seasonings until the turkey is cooked through and the spinach is wilted. Fill the bell pepper halves with the turkey mixture and place them into a baking dish. Bake for 20-25 minutes. Season with additional saltand pepper if desired. Allow to cool and enjoy!
