Ingredients

1 cup, diced [152 g] Watermelon
1 medium [201 g] Cucumber (chopped)
0.5 pepper [11 g] Jalapeno Peppers (sliced or chopped)
Directions
Season pork with half a lime, chili powder, paprika, cayenne, and salt.
Spray pan with avocado oil and set to medium-high heat.
Cook pork for about 10 minutes per side or until internal temperature reaches 165 degrees F (74 degrees C).
Chop watermelon, cucumbers, and jalapenos. Garnish with remainder of lime.
Serve salad chilled and pork warm.
