Ingredients
- 1 medium spaghetti squash
- 2 tbsp (28 g) olive oil
- 1lb (448 g) ground turkey
- 1 1/2 cups (105 g) mushrooms
- 1/2 tsp (1 g) Italian seasoning
- 4 cloves (12 g) garlic
- 1/2 tsp (0.6 g) crushed red pepper flakes
- 2.5 cups (75 g) package baby spinach
- 1.5 cup (224 g) cherry tomatoes
- 2 tbsp (10 g) shredded parmesan cheese
Directions
- Preheat oven to 400°F (204°C).
- Cut spaghetti squash in half, remove seeds, and season with 1 tbsp oil, salt, and pepper. Place face down on a baking sheet and cook for 45 minutes.
- While the squash is roasting, heat 1 tbsp oil in a pan on medium heat.
- Add ground turkey and sliced mushrooms and cook on medium heat for about 5 minutes or until the turkey is cooked.
- Add minced garlic, Italian seasoning, red pepper flakes, and chopped tomatoes.
- Add fresh spinach in batches to the sausage mixture and cook until the spinach wilts.
- Stuff the squash with the mixture and top with parmesan cheese to serve.
