Makes 4 servings
Ingredients:
• 1 bay leaf
• 1 small bell pepper, seeds and membranes removed, chopped
• ¼ tsp ground black pepper
• 1 cup button mushrooms, halved
• 4, (7-oz.) raw bone-in, skinless chicken thighs
• ¼ cup fresh basil, chopped
• 2 cloves garlic, minced
• ¼ tsp salt
• 2 scallions, minced
• 1, (14.5-oz.) can petite diced tomatoes
• 2½ cups zucchini “noodles” (thinly sliced or sprialized zucchini)
Directions:
1. Combine chicken, garlic, bell peppers, mushrooms, tomatoes, bay leaf, salt and pepper in a slow cooker. Set on low for 6-8 hours.
2. Right before serving, stir in zucchini "noodles" and basil; mix thoroughly to combine.
