Seared Scallops with Italian White Beans

Servings: 2, Prep Time: 10 min, Cook Time: 20 min

Ingredients

  • 10-12 oz (192 g) large scallops
  • 1 cup (180 g) white beans
  • 4 cups (60 g) baby spinach
  • 3 garlic cloves
  • 2 tbsp (28 g) olive oil
  • 2 tsp (6 g) salt
  • 2 tsp (4.2 g) pepper
  • 1 tsp (2.4) red pepper flakes
  • 4 tbsp (60 g) dry white wine
  • 4 tbsp (60 g) water

Instructions

  1. Add olive oil to pan and cook on medium heat.
  2. Add garlic cloves to pan and cook until fragrant.
  3. Add beans, spinach and red pepper flakes to pan and cook for about 2 minutes.
  4. Add white wine and water and cook for 5-7 minutes.
  5. Season scallops with salt and pepper. Move beans and spinach mix to the side and add scallops to the pan.
  6. Cook scallops on each side for about 3-5 minutes.
  7. Let cool and serve
