Ingredients:
• ¼ tsp ground black pepper• 1¾ lbs. boneless, skinless chicken breast
• 1½ tbsp butter, melted
• 1 pint cherry tomatoes, halved
• 1 cup sliced cucumber
• 10 pitted Kalamata olives
• 2 tbsp lemon juice
• ¼ tsp pepper
• ⅓ cup reduced-fat feta cheese
• 6 cups romaine lettuce, torn or roughly chopped
• ¼ tsp salt
• ¼ tsp salt
Directions:
1. Pre-heat grill or oven to 350⁰F.
2. Season chicken with butter, salt, and pepper.
3. Grill or roast chicken until it reaches internal temperature of 165⁰F, about 25 minutes. Once chicken breasts are cooked, remove and set aside to rest (about 5 minutes) before slicing.
4. Meanwhile, combine the lettuce, cucumber, tomatoes, olives, feta, lemon juice, and remaining salt and pepper and toss well.
5. Serve chicken with Mediterranean salad.
