GAPS Friendly Egg Muffins

Servings: 2, Prep Time: 10 min, Cook Time: 15 min

Ingredients

  • 1 tablespoon [13.5 g] Olive Oil

  • 1 medium (approx 2-3/4" long, 2-1/2" dia) [114 g] Red Bell Pepper

  • 1 cup [30 g] Spinach

  • 4 large [200 g] Egg

  • 1 tbsp [10 g] Hemp Seeds

  • 0.25 cup, shredded [28.25 g] Cheddar Cheese

  • 2 cup, chopped [354 g] Honeydew Melon

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Generously grease the serving size number of slots in a muffin pan with olive oil.

  3. Dice the bell pepper and chop the spinach. Evenly distribute the bell pepper and spinach to the muffin pan.

  4. Scramble the eggs with the hemp seeds and cheese in a bowl. Pour over the bell pepper and spinach.

  5. Top with a dash of salt and pepper and bake for about 15 minutes until eggs are set.

  6. Serve with a side of fruit.
