Egg White Breakfast Tacos

Ingredients

  • 3 small tortillas (90 g)
  • 4 large (132 g) egg whites
  • 3 oz (84 g) ground turkey
  • 2 cups (60 g) baby spinach
  • 1 medium (114 g) red bell pepper
  • 1 tbsp (packed) (15 g) feta cheese
  • 1 cup, halves (152 g) strawberries

Directions

  1. In a skillet over medium heat, cook the ground turkey with a dash of salt and pepper, crumbling as you go along. Meanwhile, dice the bell pepper and roughly chop the spinach.
  2. Add the baby spinach and diced bell pepper to the pan. Cook for about five minutes.
  3. Add the egg whites, stir everything together and cook for another five minutes or until the eggs are cooked throughout.
  4. Divide the turkey/egg combo among three tortillas. Serve with the halved strawberries.
