Delicious Gluten and Sugar Free Brownies

Ingredients

  • 1/2 cup blanched almond flour
  • 1/4 cup cocoa powder
  • 3/4 cup erythritol
  • 1/2 tsp baking powder
  • 1 tablespoon instant coffee (optional)
  • 5 tablespoons butter (or 1/2 cup + 2 Tblsp)
  • 5 tablespoons of softened coconut oil (unrefined)
  • 2 oz dark chocolate (70% or more)
  • 3 eggs at room temperature
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line an 8x8 inch or 8x9 pan with parchment paper, aluminum foil or grease with butter.
  2. In a medium mixing bowl, whisk almond flour, cocoa powder, baking powder, erythritol, and instant coffee. Be sure to whisk out all the clumps from the erythritol.
  3. In a large microwave-safe mixing bowl, Melt butter and chocolate for 30 seconds to 1 minute or until just melted. Whisk in the eggs and vanilla then gently whisk in the dry ingredients just until mixed through. Be careful not to over mix the batter or it will become cakey.
  4. Transfer batter into a baking dish and bake for 18-20 minutes or until a toothpick inserted comes out moist.
  5. Cool for at least 30 mins to 2 hours in the fridge and slice into 16 small squares.

Lemon-Dill Baked Cod with Quinoa & Asparagus

SERVINGS: 2 PREP TIME: 10 MINUTES COOKING TIME: 15 MINUTES INGREDIENTS 10 oz [280 g] Cod (2 Fillets) 2 tbsp [28 g] Lemon Juice 1 sprigs [0.2 g] Dill (Chopped) 0.5 cup [85 g] Quinoa (uncooked) 1 bundle [100 g] Asparagus (Trimmed) 2 tbsp [28 g] Avocado Oil (Divided) 2 dash [1.25 ml] Kosher Salt (Divided) 1 dash [0.1 g] Black Pepper DIRECTIONS Cook the quinoa according to the package instructions. Preheat the oven to 400°F (204°C). Toss the asparagus with half of the avocado oil and half the kosher salt. Spread it in a single layer on a baking sheet. Roast for 5 minutes.Reduce the oven temperature to 375°F (190°C). Place the cod fillets in a baking dish and drizzle with the remaining avocado oil and all of the lemon juice.
