Ingredients
- 12 oz (336 g) ground turkey
- 1/4 cup (28 g) almond flour
- 2 tbsp (20 g) chopped onion
- 1 tbsp (2.5 g) chopped fresh basil
- 1/2 tbsp (7 g) coconut aminos
- 1/2 tsp (1 g) curry powder, divided
- Salt and pepper to taste
- 1/2 tbsp (7 g) olive oil
- 1/2 cup (122 g) chicken broth
- 2 tsp (6 g) minced garlic
- 1/4 cup (57 g) coconut milk (full fat from a can)
- 1 cup (160 g) cooked egg noodles
- 2 cups (142 g) steamed broccoli
Directions
- In a large bowl add ground turkey, almond flour, chopped onion, chopped fresh basil, coconut aminos, 1/4 tsp curry powder, salt, and pepper. Use your hands to mix until well blended.
- In a skillet, heat olive oil over low-medium heat. Roll turkey into 1 inch diameter balls and place in the skillet. Cook until bottoms are lightly browned, then turn the turkey balls over.
- Add chicken broth, 1/4 tsp curry powder, and garlic to the skillet. Cook approximately 10 minutes, until turkey balls are cooked through. Add coconut milk and cook for one additional minute.
- Serve over egg noodles and steamed broccoli.
