Ingredients
- 1 large (50 g) egg
- 2 large (66 g) egg whites
- 2 links (136 g) organic chicken sausage
- 1 tsp (4.8 g) olive oil
- 2 cups, chopped (266 g) sweet potato
- 1 medium (114 g) red bell pepper
- 1 dash (1 g) Himalayan pink salt
- 1 dash (0.1 g) black pepper
- 1/4 cup (59.25 g) water
Directions
- Add olive oil to a pan and place on medium heat.
- Add sweet potatoes, pepper and seasoning. Once pan is hot, add water to help soften potatoes while cooking. Cook for about 15-20 minutes until potatoes are soft.
- Move potatoes to one side of the pan and add the sausage.
- Cook sausage for 8 minutes.
- Move the sausage aside and cook egg/egg whites to your liking.
- Move ingredients to a plate and serve warm.
