Classic Egg and Sausage Breakfast

Servings: 3, Prep Time: 10 min, Cook Time: 30 min

Ingredients

  • 1 large (50 g) egg
  • 2 large (66 g) egg whites
  • 2 links (136 g) organic chicken sausage
  • 1 tsp (4.8 g) olive oil
  • 2 cups, chopped (266 g) sweet potato
  • 1 medium (114 g) red bell pepper
  • 1 dash (1 g) Himalayan pink salt
  • 1 dash (0.1 g) black pepper
  • 1/4 cup (59.25 g) water

Directions

  1. Add olive oil to a pan and place on medium heat.
  2. Add sweet potatoes, pepper and seasoning. Once pan is hot, add water to help soften potatoes while cooking. Cook for about 15-20 minutes until potatoes are soft.
  3. Move potatoes to one side of the pan and add the sausage.
  4. Cook sausage for 8 minutes.
  5. Move the sausage aside and cook egg/egg whites to your liking.
  6. Move ingredients to a plate and serve warm.
