Chicken Salad Lunch Combo

Ingredients

  • 5 oz (140 g) canned chicken, drained (or one shredded, cooked chicken breast)
  • 1 tbsp (15 g) avocado oil mayonnaise
  • 1 tsp (1 g) dried dill
  • Salt and pepper to taste
  • 5 red grapes, halved
  • 1/2 (7.5 g) stalk green onion, chopped
  • 2 tbsp (10 g) red onion, chopped
  • 2 cups (40 g) arugula
  • 1 oz (28 g) macadamia nuts
  • 1 scoop (2 g) matcha powder
  • 1 cup (245 g) almond milk

Directions

  1. Mix chicken with avocado oil mayonnaise, dill, salt, pepper. Once well combined, mix in grapes, green onion, and red onion.
  2. Add arugula to a salad bowl and top with chicken mixture.
  3. In a mug, warm almond milk and stir in matcha powder.
  4. Serve chicken salad and matcha latte with a side of raspberries and macadamia nuts.
