Chicken Lentil Soup

Ingredients

  • 2 tbsp (28 g) olive oil
  • 1 medium onion, chopped
  • 2 ribs celery, chopped
  • 3 medium carrots, chopped
  • 1/2 tsp (0.5 g) dried rosemary
  • 1 tsp (2 g) paprika
  • 1 tsp (1 g) dried oregano
  • 1 tbsp (9 g) minced garlic
  • Salt and pepper to taste
  • 1 lb (454 g) chicken, cubed
  • 1 cup (200 g) dried brown lentils
  • 6 cups (1.4 kg) bone broth
  • 1.25 cup (340 g) crushed tomatoes

Directions

  1. In a large pot, warm olive oil over medium heat.
  2. Add onion, celery, and carrots and cook for five minutes. Add rosemary, paprika, oregano, garlic, salt, and pepper and cook 1 additional minute.
  3. Add chicken, lentils, bone broth, and crushed tomatoes to the pot. Bring to a boil, then reduce heat to a simmer. Cook for approximately 20 minutes, until chicken is cooked through and lentils are soft.
  4. Allow to cool for approximately 5 minutes and serve warm.
