Ingredients
- 1 lb (454 g) ground beef
- 2 tbsp (28 g) olive oil
- 1/2 cup (80 g) onion, chopped
- 1/2 cup (57 g) red pepper, chopped
- 2 cloves (6 g) garlic
- 2 cups (280 g) butternut squash, cubed
- 2 cups (176 g) brussels sprouts
- Dash of salt and pepper
- 1/2 tsp (1 g) Italian seasoning
- 1/2 cup (120 g) beef bone broth
Directions
- Heat oil in a pan on medium heat and add minced garlic. Cook until fragrant (about 3 minutes).
- Add onions, brussels sprouts and peppers and cook for 10 minutes.
- Add ground beef and seasonings to the mix and cook for 5 minutes to brown the ground beef.
- Add in butternut squash and beef bone broth. Cook for another 10-15 minutes until broth has evaporated.
- Enjoy warm!
